What a lovely post. It's so sad to hear how climate change is affecting these traditional industries. Thank you for sharing your photos and engaging story. I will look at miso in a whole new light.

Funny right, as soon as you see through another's lens, you realize yet another way this affects everyone and everything--including the microbes that make miso.

For the 1:1 ratio in the lighter misos, does that refer to cooked beans weight, or dry?
